Nowadays, I.C. LA COPE, has a modern slaughterhouse provided with the recent technological advances applied to the sector, such as the slaughter by CO2, a system that scalds the animals through saturated steam, which avoids contact with the water and the consequent use of the wreckage of the animal for human consumption. A refrigerated channel connects the slaughterhouse with the stabilization chamber or airing chamber, in a clean and safety way, with a scrupulous respect for the cold chain. In these chambers the temperature is registered 24 hours of the day to reach the maximum point of quality and texture in the meat.
